The new lounge offers the ideal vantage point to witness the dramatic changing hues of the legendary Santorini sunset, facing the awe-inspiring panorama from its vast floating terrace. Showcasing the finest champagnes, cocktails and premium spirits, there is plenty to indulge in including the signature “Grace Rose” – Billecart-Salmon Brut Rosé, Grey Goose vodka, fresh raspberries, lemon juice and rose water. The “Grace Cocktail” was created especially by Salvatore Calabrese, the celebrated cocktail connoisseur and one of the world’s leading bartenders. It is a subtle blend of apple juice, pear purée, lemon juice and premium vodka with a hint of lemon grass – refreshing and sophisticated with a hint of Greece and the Mediterranean. Executive Chef Spyros Agious has devised a menu of signature creations for the champagne lounge. Included are Bottarga and caviar canapés, hot and cold plates, premium local cheese selections and desserts. Highlights comprise of a trio of fresh shucked oysters and Bonito & Greek salad tartar wrapped in smoked salmon. Inside, a feature wall is made of lava rock from Santorini using local architectural techniques, with a mirror behind it to allow the light to bounce off. A fully lit honey onyx bar with brass shelves provides a dramatic statement foil to the dark volcanic stone. The bar is furnished with Emperador marble coffee tables and sofas handmade in Greece upholstered in C & C Milano fabrics, all with brass finishes. A curated collection of modern art is showcased in the champagne lounge from the renowned RARITY GALLERY, the first Greek gallery to exhibit the works of internationally acknowledged contemporary artists. The champagne lounge at Grace Santorini is available to hotel guests, visitors as well as for exclusive, private use and is the ideal venue for celebrations.
