The award-winning Kool Life Restaurant & Bar of the Life Gallery Athens hotel is entering a new era of gastronomy through its collaboration with Greek chef Giannis Baxevanis.

“Enjoying a long and successful career, chef Giannis Baxevanis is a ‘maitre’ of traditional Greek products and innovator in the use of fresh local ingredients,” the management of Life Gallery Athens said in an announcement.

Kool Life’s cuisine is now full of flavors, with appetizers including feta beignet with verjus dressing and spicy Florina peppers sorbet; salads; homemade Cretan pasta with mussels; smoked eel and green apple; fluffy spetsofai with potato risotto; eggs and smoked cheese from Metsovo, and oxtail with smoked aubergine and fresh cream cheese.

“Chef Baxevanis has succeeded in highlighting traditional Greek recipes and transforming them through a contemporary eye into dishes of a superior gastronomy level,” the hotel’s management added.

For the new menu, Baxevanis worked with the new head chef of Life Gallery Athens, Dionysis Zacharopoulos.

The restaurant’s selection of main courses features fresh ingredients such as red mullet served in an olive crust with cauliflower and citrus sauce; rabbit with wild Greek mushroom ragout and zabaglione flavored with tarragon and thyme honey vinegar, and slow-cooked goat served on sour wheat with carrot and sour apple puree.

The dishes aim to add a new dimension to traditional Greek recipes, while accompanied by the hotel’s extensive wine list, which boasts labels from Greek and international vineyards.

The menu’s new identity is also obvious from the carefully designed desserts, with ingredients including yoghurt and mastic, pistachios from Aegina, quinces and mandarins, tahini, pears and tsipouro.
