The restaurant’s management expects the collaboration to boost the gastronomy selections of Santorini in 2021. “For 35 years, Selene has been associated with the discovery and elevation of Santorini’s gastronomic treasures. Today, from the premises of an old monastery where the restaurant is housed, Ettore Botrini will transform the fine ingredients of Santorini into contemporary dishes, evolving the gastronomic scene of the island,” management said. With a career since 1986, Botrini aims for his cuisine to have a strong sense of locality and tries to present in the best possible way the flavors of Greece to those who visit his restaurants. For Botrini, cooking is not just a creative art but more of a way of communicating and expressing the inner world. He gives great importance to his team and to collaborations with local producers, who provide him with the best possible raw materials to turn the food into a culinary experience. From 2003 until today, the restaurants of Ettore Botrini, as well as the restaurants with which he collaborated from time to time, have been awarded with 1 Michelin Star (2014-2020), 48 Golden Toque and 11 stars by FnL Guide. Selene is one of the most awarded restaurants on Santorini and a proud pioneer of modern Greek cuisine. From its new home, a former monastery in Fira town, the restaurant continues the work of a lifetime, adding colors on the canvas of fine dining and supporting the evolution of modern Greek tastes.
