Château Margüi’s winery, renovated in 2018, operates with a gravity flow system across three levels, ensuring a gentle winemaking process. Grapes are sorted on the second floor before undergoing delicate pressing on the first floor using pneumatic presses. The juices are then carefully transferred to the ground floor winery, where temperature control is closely monitored. The white grapes, harvested slightly over-ripe in some vineyards, produce a rich and distinctive wine. Part of the white wine is aged in new French oak barrels, adding depth to the flavor profile. The terroir contributes to a balanced wine with a harmonious blend of acidity, fruitiness, and roundness. Neoma Hotel opened in May 2022 in the historic Philopappou area. With 16 rooms offering views of the Acropolis, the hotel provides curated public areas, including a gym and a restaurant, ensuring a comfortable and memorable stay for guests.
