A balanced cuisine based on fresh ingredients takes center stage at Bratsera’s restaurant, with two award-winning chefs signing the menu. Renowned award-winning Greek chef Michalis Nourloglou joins forces with emerging new chef Dimos Samourakis, aiming to highlight the essence of the Mediterranean and the island’s rich culinary heritage with a menu that celebrates fresh, local ingredients. “Inspired by nature, seasonality, and the farm-to-table philosophy, I consider the joy and excitement on the faces of my restaurants’ guests as the vital cooking motivation that drives my passion and inspiration for cooking,” said Chef Nourloglou. From seasonal delights to traditional favorites, every dish promises a symphony of flavors that will delight and inspire guests. The menu features high-quality gastronomy options such as anchovies marinated in assyrtiko vinegar and tomato marmalade on sourdough bread or succulent lamb paired with eggplant, tomato paste, and yogurt. The Bratsera history Bratsera terrace. Located on Hydra, the Bratsera Hotel stands as a testament to the island’s rich naval history and connection to the sea. Once a bustling sponge factory dating back to 1860, the hotel has been restored, preserving the historical charm of the stone-built factory of the 19th century while embracing modern elegance combined with old-world charm and contemporary comfort. According to the hotel’s management, with its unique architectural design, Bratsera remains deeply rooted to the island’s rich sociocultural past. Even its name, “Bratsera”, is a term used by Greek sponge divers for the mother vessel that would return them back to the land. Bratsera garden terrace.
