The renowned “Elio’s” Italian American Chophouse has returned to the NOŪS Santorini luxury resort, once again bringing the vibrant atmosphere of a New York trattoria to its guests.

Curated by acclaimed Greek-American chef and restaurateur Ari Vezené, “Elio’s” reopened its doors on May 1, boasting a seasoned team of culinary experts, mixologists, and hospitality professionals.

“Returning for its second season at NOŪS Santorini, ‘Elio’s’ promises an unforgettable dining experience, seamlessly blending the chic atmosphere of a New York trattoria with the timeless flavors of classic Italian cuisine, accentuated by the finest local ingredients sourced from Santorini and the Cyclades,” as stated in the resort’s official announcement.

Drawing inspiration from Vezené’s Green Garlic Studios, the restaurant invites gastronomy lovers on a culinary journey infused with Italian influences, echoing the essence of “cucina di nonna” within a timeless old-school atmosphere.

The menu showcases an array of traditional Italian antipasti and pasta dishes, such as the lobster tagliolini fra daviolo adorned with pink tomato sauce, lemon, and parsley, or the savory chicken cacciatore featuring olives, guanciale, and porcini mushrooms.

For mains, guests can savor an eclectic range of courses, from the classic beef santimbocca paired with prosciutto San Daniele, sage, and chardonnay wine, offering a contemporary twist, to the Greek traditional delicacy of sea bass drizzled with lemon and olive oil.

Fans of American steakhouses will delight in the signature prime cuts, including the succulent Wagyu Giaponnese striploin steak and the flavorful Delmonico ribeye, among others.

To enhance the culinary experience, Elio’s offers a curated wine list featuring a diverse selection of Greek and Italian varieties. Meanwhile, the restaurant’s bar crafts sophisticated cocktails such as the Aperol with peach and Indian tonic, alongside the iconic Manhattan.

Adding a touch of nostalgia to the Greek summer, dinners are serenaded with a melodic journey through the 50s, 60s, and 70s, reminiscent of the ambiance found in classic Italian trattorias of New York.

Located in Messaria, NOŪS luxury resort has recently opened its doors for the summer season, boasting 121 rooms, with the majority nestled within bungalows complete with private pools.
